Here's my cha kdam and the recipes below. Enjoy!
Ingredients:
3 medium size blue crabs
2 tbs of crab paste
4 stalks of green onions
Ginger
Cilantro
Sugar
Lemon Pepper
2 tbs of fish sauce
2 cloves of garlic
2 tbs oil (or butter)
½ Jalapeño (depend on how spicy you want)
2 tbs cognac (optional)
Steps:
1.Clean crab and remove main claws
2.Deshelve the crab and save fat (yellow stuff) in a small bowl
3.Cute the crabs in quarter (cut in halves and then halves again)
4.Clean green onions and cut into 1” lengths
5.Remove the peel from ginger and cut into small stripes
6.Mince cilantro and cut the jalapeño into small cirlces
7.Mince garlic
8.In wok/pan, heat oil, add garlic, crab paste, and add the saved crab’s fat. Cook until it started to lump
9.Add ginger and then crabs
10.Stir until the seasoning coated the crabs
11.Cover the wok/pan for about 5 mins and then stir.
12.Continue covering and stirring until the crab turn red
13.If too dried, at 2 tbs of water or cognac (optional) and cover.
14.Before removing from wok/ add green onions and mixed
15.Plate and garnish with cilantro.
